What you need...


Saute Onion, Garlic and Pine Nuts for 3 minutes.


Add Chicken Stock, Pumpkin and Bay Leaves, simmer for 10 minutes.


Remove the Bay Leaves then add Cream and Spices, then simmer for 30 minutes.





Coat the seeds in olive oil and salt, then bake in the oven for 6 minutes at 220C.

Pumpkin Soup


Really good pumpkin soup! Takes about an hour but sooo worth it.

1kg Pumpkin
600ml Cream
500ml Chicken Stock
Pine Nuts
1 Red Onion
2 Cloves Garlic
2 Bay Leaves
Saffron
Nutmeg
Cardamom
Salt/Pepper
50g Butter
