The goods!
Add the greens and olive oil first, then blitz, these will all reduce and leave room for the hard stuff.
Add the hard stuff and blitz again, top up with some more extra virgin olive oil and some S&P.
Pesto makes a mean dip, but I prefer to stir through pasta and cover with grated grana padano!

Rocket & Hazelnut Pesto
Leftover hazelnuts and rocket laying around? Make pesto!
Pesto is pretty much some flavourful greens, nuts of some type, garlic, hard cheese (parmigiano / grana padano) and olive oil discombobulated into a yummy paste. Traditionally this would be made with basil and pine nuts, but whatever, it’s good to experiment with different ingredients for a particular recipe. ?
