I do sincerely apologize for the lack of updates! It’s just this city has way too many restaurants with amazing food! So while I have not uploaded many recipes, I’ve been inspired and have much to work with! I’ll keep you all posted this weekend…
Cheers,

I am now in Melbourne and all settled into the new house. The new kitchen is awesome and includes an enormous kitchen island to work on. The setup would be perfect for a cooking show, and since I do own a HD video camera I think it might be order to give it a go.
I also want to note that Melbourne is fucking great! The markets have everything and there are restaurants, cafes and bars everywhere. The first restaurant we went to was C&B cafe in Hardware Lane, the food was incredible. I was really blown away by how good it was and how cheap it was. I’m going to recreate the dish I had there and post it up here in the next day or so. So keep an eye out.

Sorry I have not updated the site for some time. We’ve been busy with our move to Melbourne which hasn’t left a lot of time to document the tasty goodness that we’ve been creating. Next week some time, expect a big update!

Well the past few weeks have been busy preparing for our move to Melbourne, which is the reason I haven't added much to the site as of lite. Although I intend to have a brief blitz and add as many as I can before the movers come and take our stuff away. It will be interesting to see what I can prepare with a pot, pan and ikea steak knives on plastic plates...
Cheers,

Success! Sorta...

Last week my first attempt at lasagne ever was a total success. Unfortunately we had a guest over for dinner who had an appetite that rivalled mine so the remnants of that dinner only supplied one day of lunch for the work week. Regardless, it was a (thoroughly biased) successful effort and I will make it again tonight in order to offset my weekday lunchtime purchases. Check it out: Chachie's Lasagna.

Sometimes (actually most times) a guy doesn't really feel like cooking. While knowing how to cook can definitely affect this, a myriad of other factors (missing ingredients/low motivation/sport) come in to play. There are moments however, when we have the overwhelming desire and motivation to get things done. My plan is to harness this fleeting passion for work and use it to produce great food en masse, and in advance. I'll divide it up and throw it in the freezer and fridge for a later day. Why would I want to do this? Scenario: I wake up and while preparing for work I realize I have nothing for lunch. I'll have to buy a sandwich or some other unappetizing junk. Alas, if I were to have followed the plan I would be able to procure a tasty dish from the fridge. I would have good, healthy and cheap food with little or no hassle. For as little as $2.99! Sorted.
I'll keep you all posted as to my progress.
Later,
Chachie

The Language of Food

As you may have noticed from the meagre descriptions provided in each of my recipes (see photos on the left), my culinary vocabulary is rather weak. It would seem that ‘talking the talk’ is altogether different that ‘walking the walk’. It wasn’t until I started posting my recipes to this site that I ever realized how difficult it was to describe a recipe without allowing one to taste or smell the result. Many times I’ll take leftovers to work and those around me will get up and crowd around wondering what I’ve brought in this time. The smell and my rather passionate description of the ingredients tend to get the message across. I guess I’ve always ignorantly assumed that food should speak for itself but now I feel obligated to pitch my recipes to my intended audience with more than mere images. My wife will consistently ask what I’m making, my reply will be basic, ‘some ingredient prepared in a certain way with some other ingredient’. She will ask again as it is about to be served and I’ll say ‘how about you just try it’. It is once she has had a taste that her expression changes, relative to what she thinks of the recipe. It’s amazing that her expression can be so varied and easily read. Most often it results in furled eyebrows and an overtly pleasurable ‘MMMMMMMM!’ followed by a vigorous nodding of the head. The inverse of which is a look of apology, raised eyebrows and pouted lips, her jaw obviously not chewing. Maybe it might be an idea to just take a picture of her expression the moment she has her first bite of each recipe, posting the expression in the photo rather than a textual description.
Having a photo of my wife’s expression as a replacement to a textual description wouldn’t be SEO friendly. Plus, it would be the easy way out. I’ll need to crack a few cookbooks, read some more blogs and watch the tv shows of those who obviously know their trade. I will also endeavour to cater to my intended audience, regular guys who can’t follow a regular recipe. I would like to do this without alienating others in the food blogging community by using language that is basic, amateurish and or inappropriate. If you have any opinions on the topic, give me a shout...
Here's a little picture of me enjoying monk fish at some random restaurant in Lagos, Portugal:

Well, I attempted my first pastry today. It tasted great but looked like crap. Turns out that it's harder than you might think. Maybe it's because I cheated and used premade frozen pastry sheets. I'll have a go this week at making it ALL from scratch!
Also, I updated the look and feel of the site. If you have any suggestions on how I could improve the site send me an email.

I'm a dude and I can cook. I actually like to cook, now that I know how! Now I want to share some of my skills with the rest of the dudes out there. The recipes you see on this site are proven to please and have detailed photos and instructions on how to make them. That's right, photos taking you through each step of the way.
Anyway, I'm just getting started with this site so keep coming back to see whats new.
Cheers,
Chachie
