In a medium saute pan, heat olive oil and add chopped pork chop pieces. Sprinkle with spice rub and cook all the way through. Remove meat and sauté carrots until tender, about 8 minutes.
Add rice, peas, soy sauce, and black pepper. Incorporate all the ingredients and finish with butter for extra flavor and shine. Sprinkle with fresh scallions and serve immediately.
